Winemaker’s Lab is Hyatt Vineyard’s passion project. A place where ideas are tested and tradition can be challenged. Every year a single experimental wine is released, exploring a new concept in fermentation, blending, or winemaking technique.

Each vintage is different. Each release is limited.

The only constant is the willingness to ask what if?

The first release from the Winemaker’s Lab explores pét nat, one of the oldest methods of sparkling wine. Crafted from 60% Muscat and 40% Riesling, this dry sparkling wine was bottled mid-fermentation and finished naturally in bottle the old-school way. The result is lightly bubbly, aromatic, and bright with floral lift, citrus snap, and refreshing acidity.

No heavy intervention. No overthinking. Just energy in a glass.
